买的豆腐脑含水量太大,自己做的豆腐脑光滑细腻,咸口甜口,味道都很赞*。

Steps to make 自制豆腐脑

  • 1.干黄豆150g,淘洗干净,天热,放冰箱里浸泡一夜。
  • 2.水位加到600ml,放入一半的黄豆,分两次打。
  • 3.按果蔬键,打2个程序更细腻。
  • 4.打好的豆浆。
  • 5.用细纱布过滤,我用的是很细的滤勺。这个一定要过滤,要不做出来的豆腐脑粗糙不细腻,口感差。
  • 6.过滤好的豆浆。(豆渣不要扔,可以做煎饼)
  • 7.小火熬煮,边熬边搅动,防止糊底。这样打出来的豆浆浓度不稀不稠,豆香味儿非常浓郁。下次试试用这个方法做豆浆。
  • 8.边搅拌边撇出上面的浮沫儿。
  • 9.煮开后再煮个四五分钟,防止假沸。
