轻芝士蛋糕
芝士蛋糕也称乳酪蛋糕。但我们一般说的cheese cake指的都是重乳酪蛋糕。重乳酪蛋糕在欧美比较风行,制作材料中不含面粉,cream cheese(奶油奶酪)的比重很大。
东方则比较青睐轻乳酪蛋糕,加入粉类制作,奶油奶酪含量较小,奶酪口感较淡

  • 淡奶油150克
  • 细砂糖70克
  • 低筋面粉25克
  • 玉米淀粉20克
  • 黄油38克

Steps to make 轻芝士蛋糕

  • 1.分离蛋黄和蛋清
  • 2.蛋清盆中要无水无油
  • 3.将奶油奶酪切小块,隔水软化,和淡奶油混合,一边加热,一边搅拌均匀,搅拌至顺无颗粒状即可
  • 4.分次加入蛋黄,没加入一个,就搅拌均匀
  • 5.黄油化成液态,加入奶酪糊中,搅拌均匀
  • 6.筛入低筋面粉和玉米淀粉
  • 7.蛋白分三次加入细砂糖,打至大弯钩状态
  • 8.取三分之一蛋白霜加入奶酪糊中切拌均匀,
  • 9.再倒回三分之二的蛋白霜中,拌匀,倒入 模具中
  • 10.放入烤箱150度40分钟,转170度20分钟(依据自家烤箱脾气决定)
  • 11.烤好的蛋糕稍凉几分钟,然后进行脱模
