盐焗鸡
盐焗鸡是广东久负盛名的一道汉族传统佳肴,也是广东本地客家招牌菜式之一,属于粤菜系 - 客家菜。特意网购了盐焗鸡粉和盐焗鸡纸,试做了一次,简单的美味!

Steps to make 盐焗鸡

  • 1.买了童子鸡,洗净
  • 2.沥干水分或者用厨房纸巾吸干水分
  • 3.重要的调味料盐焗鸡粉
  • 4.在鸡身上抹上盐焗鸡粉
  • 5.再抹上白酒
  • 6.把鸡放入保鲜袋里入冰箱冷藏腌制半天
  • 7.把腌制好的鸡取出吹干表皮,把葱姜塞入鸡的肚囊里
  • 8.把腌制好的鸡取出吹干表皮后,包上专门的盐焗鸡纸 ,先包上白色的纱纸
  • 9.外面再包上黄色的竹笋纸
  • 10.锅中放入大料:花椒、八角、桂皮
  • 11.倒入粗盐翻炒
  • 12.炒至粗盐有点泛黄色
  • 13.先把炒好的粗盐1/3量放入砂锅底部
  • 14.把包好的鸡放入砂锅中
  • 15.再把剩下的粗盐倒入砂锅中,把鸡埋起来
  • 16.盖上盖子小火焗40分钟左右
  • 17.时间到再焖一会儿即可取出
