原文摘录:《红楼梦》第46回写了王熙凤劝邢夫人不要因大老爷先生(贾赦)要娶鸳鸯的事去找老太太(贾母),临了说了一句:“才我临来时,舅母那边送来了两笼鹌鹑,我吩咐他们炸了。”这就是“炸鹌鹑”这道红菜的来历。由于鹌鹑有食补的价值,所以在红菜研制中也大显身手。

        鹌鹑肉营养价值高,含有丰富的蛋白质和维生素,是极好的营养补品,有动物“人参”之称。据本草纲目记载:鹌鹑肉能“朴五脏,益中续气,实筋骨,耐寒暑,消结热”。“炸鹌鹑”口感外脆里嫩、香酥可口,是广受大众喜爱的一道红菜。

    今天比较难过的一件事儿是买回刚宰杀的鹌鹑才发现没去内脏,我的天,这么残忍的事儿让我亲手干,真是好不舒服!头皮都是麻的!

    Steps to make 炸鹌鹑

    • 1.鹌鹑去内脏清洗干净,浸泡一小时,多次换水,将腿折叠入腹中, 翅膀反折到背部
    • 2.高汤中放入盐、五香粉、料酒、葱姜,烧开后,放入鹌鹑汆烫
    • 3.汆烫好的鹌鹑趁热倒入酱油腌制上色
    • 4.锅中的油烧至7成热,放入鹌鹑炸制,翻面,上色即捞出
    • 5.将油继续烧至没有响声
    • 6.放入鹌鹑复炸
    • 7.至金红色捞出沥油
    • 8.摆盘上桌即可
