【江苏】扬州炒饭
扬州炒饭又名扬州蛋炒饭,是江苏扬州经典的小吃。相传源于隋朝,后经历代厨师逐步创新,结合淮扬菜特点,发展而成。
广义的扬州炒饭,品种多,有“金裹银”、“什锦蛋炒饭”及“青菜炒饭”等。其中,什锦蛋炒饭是最典型的品种,既有虾仁的鲜嫩,又有火腿的肉香,是主食中不错的美味。

Steps to make 【江苏】扬州炒饭

  • 1.准备好食材
  • 2.开水烧开,倒入青豆胡萝卜玉米粒焯水1分钟左右,捞出沥干备用
  • 3.鸡蛋打散,葱切葱花,火腿切丁,虾仁用料酒1茶匙,淀粉1茶匙腌制10分钟
  • 4.锅里倒油加热,倒入虾仁翻炒半分钟
  • 5.再加人火腿翻炒虾仁转色变红捞出备用
  • 6.锅洗净,倒油加热(油稍多一些)加入打散的鸡蛋翻炒
  • 7.加入剩米饭1小碗,压散,炒匀
  • 8.加入青豆胡萝卜玉米粒
  • 9.再加入火腿虾仁翻炒均匀
  • 10.最后加入蚝油1茶匙,盐1小勺,鸡精1小勺,白胡椒粉1小勺,浇上香油1茶匙,翻炒均匀撒上葱花即可
