西湖牛肉羹

Steps to make 西湖牛肉羹

  • 1.牛肉细细斩成粒,越细越好;
  • 2.加入少许清水化开;
  • 3.锅中坐水,沸腾后下入牛肉粒,煮沸后捞出备用;
  • 4.金针菇提前清洗,并用凉水浸泡4小时以上;
  • 5.洗净后切碎备用;
  • 6.南豆腐切成小丁备用;
  • 7.蛋清打散备用;
  • 8.香菜切碎备用;
  • 9.锅中加入上汤;
  • 10.煮沸后,加入豆腐丁;
  • 11.加入蘑菇碎和牛肉碎;
  • 12.再次煮开后加入少许盐和糖调味儿(谨慎用盐,上汤有咸味儿)
  • 13.加入现磨胡椒粉,调味儿;
  • 14.再次煮开后,少量多次调入水淀粉,调出自己喜欢浓度;
  • 15.再次煮开,关火后打入蛋清,并顺同一方向搅散;
  • 16.最后加入少许香菜末,即可。
