  • 低筋面粉85G
  • 橄榄油40G
  • 牛奶40G
  • 细砂糖30G(加入蛋白)
  • 砂糖15G(加入蛋黄)
  • 适量(加入淡奶油)

Steps to make 巧克力麻将 奶油蛋糕 8寸

  • 1.蛋白蛋黄分离,蛋白盆保证无油无水,打蛋器打至成鱼眼泡状。
  • 2.加入1/3细砂糖,继续搅打至成细密泡沫状。
  • 3.加入1/3细砂糖,继续搅打至出现清晰的纹路。
  • 4.加入最后1/3细砂糖,继续搅打至干性发泡(提起打蛋器蛋白尖角不会下弯),将蛋白放置冰箱冷藏备用。
  • 5.蛋黄加入细砂糖。
  • 6.用打蛋器打散至砂糖溶化,不要打发。
  • 7.面粉过筛,筛入蛋黄糊里。
  • 8.取出蛋白,将1/3蛋白加入蛋黄中。
  • 9.用刮刀翻拌均匀,不要画圈以免蛋白消泡。
  • 10.将拌好的面糊倒回蛋白盆中,继续用刮刀翻版均匀。
  • 11.将面糊倒入模具中,上下震动几次模具,震出气泡。烤箱预热170℃,中下层,约1个小时。
  • 12.烤好的蛋糕取出倒扣冷却后脱模,切成均匀的3片。
  • 13.淡奶油打发:如果天气热需要坐冰打发 打至鱼眼泡时加入适量细砂糖,继续搅打至打发(忘记照照片了)。
  • 14.用抹刀均匀的涂抹在蛋糕片上
  • 15.铺上水果粒。
  • 16.用抹刀涂抹均匀,进行表面裱花装饰。
