节日烧菜一款“双冬烧蹄筋”

春节即将来临了,今天就用牛蹄筋做一道节日菜肴,里面搭配了一些水发冬菇和应季的鲜冬笋片,因此这道菜叫做“双冬烧蹄筋”。在制作这道菜之前要先把牛蹄筋处理好,把蹄筋洗净加料用高压锅焖熟然后再入菜,制作方法如下;

  • 水发香菇80克
  • 葱段30克
  • 姜片10克
  • 鲜酱油20克
  • 蚝油20克
  • 白糖5克
  • 绍酒15克
  • 烹调油20克

Steps to make 节日烧菜一款“双冬烧蹄筋”

  • 1.先把蹄筋香菇和冬笋片焯水捞出备用。
  • 2.锅中放适量烹调油烧热,下入葱姜爆香,葱姜爆香后烹入酱油再放入适量蚝油。
  • 3.然后烹入适量绍酒搅匀。
  • 4.注入适量清水烧开。
  • 5.放少许白糖提鲜。
  • 6.锅中再撒入少许胡椒粉搅匀。
  • 7.然后倒入焯过水的蹄筋等所有原料烧制片刻。
  • 8.蹄筋烧至软烂时用旺火收汁,然后用适量水淀粉勾芡。
  • 9.待芡汁糊化后便可出锅。
