手工自制筋道美味凉皮
天气暖和了,又到了吃凉皮的时候了,自己做的凉皮要比外面的筋道,特别好吃!

  • 1.250g水加1g盐搅匀
  • 2.加入500g面粉
  • 3.用筷子搅拌成絮状
  • 4.揉成团醒制10分钟
  • 5.,10分钟后揉至光滑均匀,盖好再醒制1个小时
  • 6.醒制完成,加水没过面团进行洗面
  • 7.就像平时洗衣服一样,来回揉搓至水变的浓白,然后把水倒入另一个大盆中,这样重复三四回,我洗了四回
  • 8.直至洗出来的面筋变的有弹性不易断,水也不那么浓白就可以了
  • 9.把洗出来的水全部过滤倒入盆中静置5个小时
  • 10.5个小时后,能看见水和淀粉分离,把水倒掉,剩下的就是做淀粉的原料了
  • 11.找一个圆盘底部抹油,我用的是披萨盘
  • 12.将面糊倒入圆盘转匀,将盘底铺满
  • 13.放入蒸锅蒸制1分钟
  • 14.起大泡就可以了,拿出来把凉皮取出,小心烫伤哦
  • 15.放的时候要每张都抹油再放,不然会粘连
  • 16.这个配料可以蒸制九张,这是其中一部分
  • 17.面粉加水沸水煮10分钟左右,最好上锅蒸20分钟,我为了赶时间就煮了
  • 18.煮至明显变大捞出放凉切块
  • 19.切完就是这样的
  • 20.准备大料水,锅里加油放入葱姜煸香
  • 21.放入八角、香叶、桂皮、花椒、草果,加水煮10分钟过滤放凉
