杂粮馒头
家里的面粉有好几种,莜面粉、低筋,高筋都剩一些,包装打开后容易受潮,变质。为了尽快消化这些面粉,就做了这些健康的杂粮馒头,口感比一般的白面馒头还香,有一种特有的面香味,越嚼越有味~家人还蛮爱吃的~

  • 莜面粉150克
  • 高筋面粉100克
  • 低筋面粉100克
  • 黄油20克
  • 鸡蛋2个
  • 酵母1小勺
  • 白糖80克
  • 清水150克

Steps to make 杂粮馒头

  • 1.面包机桶内加入清水、白糖、将所有面粉倒入面包机桶内,放入酵母,最后敲入鸡蛋,遮上盖子、通电、选择揉面功能键,整个揉面时间30分钟,15分钟后放入黄油,继续揉面至结束
  • 2.面粉揉好后留在面包机内发酵,过程1小时
  • 3.发酵至2.5倍大,取出面团
  • 4.放在案板上排气,整形(如觉得面团粘手,手掌涂抹一点黄油进行揉面排气,防止沾粘,尽量不要撒太多干粉,以免影响口感的柔软度)
  • 5.将排气后的面团分割成大小一样的小面团,整成圆形馒头状,遮上保鲜膜,静置15分钟再次醒发
  • 6.将馒头放入蒸锅内,遮上锅盖、先小火蒸上汽,再调成大火蒸15分钟,关火后焖10分钟再取出馒头即可
