春天来了,万物复苏,吃时令美食——青团的时候也到了。

青团是江南地区一带清明时节的传统小吃, 用艾草汁拌进粉里,再包进馅料,不甜不腻,带着清淡悠长的青草香气,糯韧绵香。

  • 白糖60克
  • 猪油40克
  • 艾草泥100克
  • 艾草汁280克
  • 小苏打3克
  • 春笋500克
  • 五花肉300克
  • 胡萝卜200克

Steps to make 艾草青团

  • 1.先准备馅料,将馅料食材中的五花肉、笋和胡萝卜搅碎,锅里放适量油,加入葱头爆香。
  • 2.加入肉末炒散。
  • 3.加入胡萝卜翻炒均匀。
  • 4.加入笋翻炒均匀。
  • 5.加入生抽、耗油和料酒翻炒均匀。
  • 6.最后加入葱叶。
  • 7.翻炒均匀备用。
  • 8.将新鲜艾草清洗干净,锅里水烧开,加2克小苏打煮2分钟捞出过凉水。
  • 9.加适量水搅碎。
  • 10.滤出汁。
  • 11.将汁烧开加入澄粉揉成团。
  • 12.将糯米粉和白糖混合,搅拌均匀,加入猪油、艾草泥和澄粉面团。
  • 13.混合均匀。
  • 14.取50克面团整成碗状,放入适量馅料。
  • 15.逐个包好,搓圆,摆上垫了山姜叶的蒸盘。
  • 16.放入蒸箱,100度蒸10分钟。
  • 17.关机后立即出炉。
  • 18.趁热在表面抹油包保鲜膜。
