水果咖啡蛋糕

Steps to make 水果咖啡蛋糕

  • 1.准备制作蛋糕的所需咖啡量称量出来;
  • 2.将称量好的咖啡、糖和油放入一容器内,同时将蛋黄和蛋清分别打入两个容器中, 其中蛋白容器要保证无水无油;
  • 3. 将蛋黄混合液搅拌均匀后;
  • 4. 加入过筛的低筋面粉和奶粉;
  • 5. 充分搅拌均匀备用;
  • 6. 将蛋清打出鱼眼泡时加入另外40克糖的三分之一,搅拌均匀后; 分两、三次加入糖搅拌均匀;
  • 7. 在打发好的蛋清中加入几滴白醋, 再打发一下;
  • 8..打发好的蛋白能用搅拌器挑起倒立起小三角不流动;
  • 9. 将打发好的蛋清的三分之一倒入混合好的蛋黄液中,将它们搅拌均匀;
  • 10. 将搅拌好的液体再倒入剩余的三分之二打发的蛋清中,将它们搅拌均匀;
  • 11. 倒入所需要的模具中;
  • 12. 放烤箱前先振动两下,再放入预热好170度烤箱中;
  • 13.中下层12分钟,烤好后拿出来倒立在网架上,温热时去除下面垫底的油纸;
  • 14.黄油室温软化, 加入糖粉, 用电动搅拌器搅拌成羽毛状;
  • 15. 加入温热的咖啡;
  • 16. 继续搅拌均匀后备用;
  • 17. 蛋糕用圆形模具切成片;
  • 18. 将搅拌好的咖啡奶油糖霜放入裱花中,沿着蛋糕的边缘挤上一圈;
  • 19. 中间放入黄桃片, 再加盖一层, 同样的放入黄桃;
  • 20.这样水果咖啡蛋糕就完成了, 再来杯 Espresso。
