【四川】叶儿粑
叶儿粑又叫艾馍,是四川地区特色传统小吃。节日食俗,在川西农家清明节、川南春节的传统食品。1940年,崇州怀远“古镇人家”将艾馍精心改制,更名为叶儿粑。制作叶儿粑选料考究,工艺精细,具有色绿形美、细软爽口的特点,为四川名小吃之一。用糯米粉面包麻茸甜馅心或鲜肉咸馅心,外裹鲜橘子叶,置旺火蒸。特色是清香滋润,醇甜爽口,荷香味浓,菜分两味,咸鲜味美。

    Steps to make 【四川】叶儿粑

    • 1.大米泡一夜用ACA多功能料理机打成米浆
    • 2.米浆过滤备用
    • 3.将糯米粉加入米浆中(也可以用普通面粉代替大米浆)
    • 4.揉成面团,稍微干一点(糯米粉中必须加普遍面粉或大米浆,不然蒸出来会塌)糯米粉跟大米浆/普通面粉比例为,5/2
    • 5.猪肉用ACA.多功能料理机搅拌成肉泥,用半肥瘦最好
    • 6.芽菜切碎
    • 7.猪肉与芽菜加少许酱油炒香即可,不用放其他调料
    • 8.粽子叶洗干净除去两头取中间备用。
    • 9.取一小块面团放入陷料封口成椭圆形
    • 10.放入蒸锅蒸十分钟即可,
