肉夹馍是在西北地区民间广受欢迎的一种小吃,以陕西地区的“腊汁肉夹馍”(猪肉)和宁夏地区的“羊肉肉夹馍”为主。腊汁肉夹馍是陕西省西安市著名小吃。很多人都做过肉夹馍,当然,每个家庭做法都不一样,但是都不外乎一个“好吃”。我们家俩男人吃的那叫一个香呀!老公说这个吃起来才有意思,肉足,味香,宝宝也很爱吃哦

Steps to make 【家庭版肉夹馍】

  • 1.将酵母、植物油、面粉放入盆中,倒入温水,用筷子将面粉搅拌成碎片雪花状。
  • 2.用手揉成光滑的面团,盖上保鲜膜或湿布,放在温暖的室温下发酵至两倍大。
  • 3.取出发酵好的面团,反复揉至表面光滑,揪成小一点的面剂子。
  • 4.取一个面团滚圆后用擀面杖擀成圆形面饼。
  • 5.平底锅不用放油,将饼坯放入锅中烙成两面金黄色即可。
  • 6.把猪肉洗净放入锅中,倒入清水 ,大火加热煮沸后继续煮3分钟后捞出,用清水冲净表面的浮沫,焯烫猪肉的水倒掉不要。
  • 7.准备好卤料
  • 8.将焯烫好的猪肉放入锅中,加入足量清水 ,用大火煮沸后再放入盐、葱、姜、生抽、老抽、冰糖等。
  • 9.炖煮2小时左右。
  • 10.香菜和青椒洗净备用。
