羊杂面
这个面是从回民朋友那里学来的,原本感觉羊杂做面不会好吃的,但在朋友那里吃了一次,感觉不错,回来就如法炮制,做好后全家人都说好吃哩。

  • 羊肚1付
  • 面粉400g
  • 煮肉料1份

Steps to make 羊杂面

  • 1.面粉中加200克水和3克盐和成光滑的面团,盖上屉布饧1小时左右
  • 2.分剂后继续饧15分钟,然后擀成面皮,表面涂抹油,放在盘中,盖上保鲜膜饧1小时以上,备用
  • 3.羊头是处理好的并预煮过的。因为自己不会处理,就买了处理好的
  • 4.把羊头和已经处理过的羊肚一起放入锅中,加水没过食材,并加入煮肉料大火煮开后小火煮2小时,煮肉料成分为:干辣椒3个、八角3个,花椒30粒,桂皮3段,生姜一块
  • 5.煮熟的羊肺一个,去掉中间的血管
  • 6.羊肺切片后用开水汆烫一下再次去除异味
  • 7.把羊肚和羊头捞出切丝,和羊肺一起备用
  • 8.煮羊头的汤煮开,加放入切好的羊杂,加盐、胡椒粉和黄酒煮几分钟,然后加一点辣椒油,煮好后离火备用
  • 9.把饧好的面拉开煮熟
  • 10.面捞入碗里
  • 11.浇上煮好的羊杂汤,撒上香葱即可
