油辣醉黄瓜
冰箱里总会有一盒做好的酱黄瓜,吃饭的时候挑出几根,摆在饭桌的角落里,我甚至都不把它当做一道“正经菜”。往酱汁里加一小杯白酒,美其名曰“醉黄瓜”。什么品种的黄瓜都可以,甚至黄瓜拔秧前摘下的没长大的黄瓜纽子,菜贩们摊在地上, 一块钱一堆的;

什么样的切法都可以,切条、切片、切花刀……入味时间有长短,口感味道没区别;

做过一次后,酱汁还可以反复利用,酌情增加调味料就行。

Details of ingredients

  • 黄瓜5根(约550g)
  • 食用油3大勺
  • 生姜1块儿
  • 香菜根5棵
  • 花椒1小勺
  • 白糖50g
  • 1小勺
  • 大蒜1头
  • 尖椒2个
  • 干红辣椒5到8个
  • 生抽200g
  • 白酒2大勺

Steps to make 油辣醉黄瓜

  • 1.新鲜黄瓜洗净;根据黄瓜大小切成2到3段,再从中间剖开,切成小条儿,这是最简单、常见的切法;(我玩个花样,摆盘漂亮,不必照做)
  • 2.将黄瓜段放进大碗,加入1小勺盐,颠匀,腌制4、5小时;
  • 3.略挤干,并用纸巾或消毒茶巾,轻轻吸吸水分;
  • 4.腌黄瓜的时候准备酱汁:干红辣椒洗擦干净,剪成小段;花椒洗擦干净备用;
  • 5.酱油、白糖、白酒备用;
  • 6.起炒锅,热锅入凉油(油可以多一些,3、4大勺的样子),小伙慢慢煸炒辣椒、花椒和几片生姜,至红辣椒呈现深枣红的颜色;
  • 7.烹入酱油和白糖,转大火煮开2、3分钟;
  • 8.关火后,立即加入白酒,汤汁会再次沸腾一下,酒香四散。做好后的酱汁,冷却至室温,备用;
  • 9.准备其他配料:尖椒切片;大蒜切片;生姜切片;香菜根洗净沥干水分(喜欢的话还可以放点胡萝卜、藕片、甚至菜花,这些蔬菜需要焯水过凉);
  • 10.将黄瓜段、尖椒片、蒜片、姜片和香菜根一起放进大盆;
  • 11.浇上冷却的酱汁,腌制2、3小时,即可。
