清真小菜“香炸芝麻羊肉”
正月十五前夕买了一只羊腿尚未吃完,一直放在低温冷柜中速冻,今天用它做一款京味儿清真小菜,叫做“香炸芝麻羊肉”。具体做法如下;

  • 白芝麻15克
  • 孜然碎粒2克
  • 花椒粉1克
  • 辣椒粉1克
  • 腌炸粉5克
  • 鸡粉1克
  • 1克
  • 酱油15克
  • 黄酒15克

Steps to make 清真小菜“香炸芝麻羊肉”

  • 1.羊后腿肉、白芝麻、孜然碎粒、花椒粉、辣椒粉、腌炸粉、鸡粉、盐、酱油、黄酒、玉米干淀粉、烹调油。
  • 2.先把羊肉切成两厘米见方的肉丁。
  • 3.里面放花椒粉、孜然碎粒、辣椒粉、腌炸粉、白芝麻、盐、鸡粉和酱油,羊肉里再放入黄酒拌匀。
  • 4.最后撒入适量的干淀粉用手反复的抓匀。
  • 5.抓匀后腌制30分钟备用。
  • 6.锅中注入适量烹调油,油温烧至五成热下入腌制好的羊肉炸熟。
  • 7.然后捞出羊肉把油温提升至七成热,再把羊肉下入油锅中复炸一遍。
  • 8.炸至羊肉皮脆捞出,然后便可码盘上桌使用。
