湖北家乡菜--清蒸武昌鱼
“才饮长沙水,又食武昌鱼”--毛主席的著名诗句。武昌鱼,做为湖北人,我可是从小吃到大的,无论怎样的做法,都是极爱的。鱼肉非常滑嫩,鲜美可口,真可谓是一道美食。
武昌鱼性温,味甘;具有补虚,益脾,养血,祛风,健胃之功效;可以预防贫血症、低血糖、高血压和动脉血管硬化等疾病。

Steps to make 湖北家乡菜--清蒸武昌鱼

  • 1.武昌鱼一条(约400克)洗净
  • 2.葱白几根,姜切丝
  • 3.将葱白部分与一些姜丝垫于盘底
  • 4.将另外一些姜丝塞进鱼肚子里,在鱼背上切3个花刀,将鱼身均匀的抹上一层薄薄的盐(少量的盐)
  • 5.锅内水开后,将鱼进锅
  • 6.大火蒸8分钟后关火,再虚蒸7分钟(关火后不要立刻端出来,等7分钟后再打开锅盖叫虚蒸)
  • 7.鱼出锅后撒上葱花,淋上生抽与热油,一道鲜嫩可口的清蒸武昌鱼就完成了
