但是这猪肚汤好喝, 处理猪肚对于很多人来说都是难事, 其实只要有三件法宝:盐、面粉和白醋(或者白酒, 但白醋家中更常备),掌握正确的方法,处理猪肚就变得很简单了, 一起来看看吧。

首先将买回的猪肚,再加入盐, 用劲揉搓, 在水龙头下用流水冲洗,正反面要重复二、三次,记得第一次一定要用盐, 盐的摩擦力最大;

接着用面粉同样揉搓再冲洗的方法处理两、三次, 因为面粉相对盐来说更柔和些, 但它的附着力强,能帮助我们进一步去除异味;

最后我们要用到白酒或者白醋,抹匀猪肚腌制几分钟,用双手反复揉搓,然用清水冲洗干净;



当然为了让猪肚少油腻, 我们要注意用剪刀去除猪肚身上的白色油脂和秽物, 经过这样出来后的猪肚就白白净净又无臭味,可以随意烹饪了。

Steps to make 白果肚片汤

  • 1.猪肚加入盐, 用力搓洗, 再用清水冲洗干净, 正、反面重复两遍;
  • 2. 再用面粉搓揉, 用水冲洗干净,正、反面重复两遍;
  • 3.用剪刀剪去猪肚里的油脂;
  • 4. 用白醋、酱油一起搅拌抹匀猪肚,然用清水冲洗干净备用;
  • 5. 冷水下锅,加入几片姜,再放入猪肚一起煮上3--5分钟;
  • 6.捞出来后用刀子刮掉白白的膜;
  • 7. 准备好姜片和其他调味料,并将其他调味料放入调味料钢球中,方便以后一次性取出;
  • 8.肚片切成拇指宽的长条放入慢炖锅中,再加入姜片和调味料钢球;
  • 9. 加入适量的开水, 水要一次性加足;
  • 10. 加上盖, 两边扣紧, 转为高温键炖上一个半小时;
  • 11. 加入白果和黑木耳,再加盖转低温键炖煮半个小时;
  • 12.最后加入白胡椒和盐调味, 加入几颗枸杞;
  • 13.装入碗中,喝汤啦。
