有时家里吃饭人少,或没很大兴致煎炒烹饪,就来一个什锦炒饭。操作起来很方便,但营养跟口味却不差,简简单单饭菜俱全。这款炒饭因为用了泡菜,所以在口味上是很明确的酸辣爽口;米饭是上顿的剩饭,不太多,就加了一个土豆;胡萝卜没有了,要不营养会更丰富些。在做什锦炒饭时最重要的是食材下锅的顺序。

  • 1.备料
  • 2.香菇飞水,沸水中加点盐,焯烫几分钟后捞出沥水待用。
  • 3.土豆、香菇、黄瓜、洋葱均切细丁。黄瓜用少许盐腌下。
  • 4.泡菜切小块。
  • 5.热锅倒食用油(我用的是葵花籽油),先下洋葱粒爆香。
  • 6.然后入香菇,油爆过香菇味道才能出来。
  • 7.下土豆丁,翻炒至土豆熟。
  • 8.米饭倒入,炒散均匀。
  • 9.泡菜入,翻炒均匀。
  • 10.最后放甜豌豆和黄瓜丁,放盐炒匀即可。
  • 11.一碗剩饭变成了两大碗什锦炒饭,足够两三个人吃了。
