红糖葡萄干年糕(方形)
过年吃年糕,作为一种民俗,早已深入人心。每年临近春节,我都会制作各式各样的年糕,送给亲戚、朋友,为亲朋好友送去新年的祝福。
本配方食材为一个26cm*26cm*7cm寸方模的用量。

  • 糯米粉1000克
  • 粘米粉350克
  • 红糖块500克
  • 清水1100克(根据米粉的吸水性增减)

Steps to make 红糖葡萄干年糕(方形)

  • 1.将红糖块、清水放入锅里煮至糖融化,糖水稍晾凉后,倒入糯米粉、粘米粉,混合均匀成无颗粒、带柔韧性、较浓稠的面糊(抓起面糊往上提,面糊很顺滑地垂下)。
  • 2.将面糊倒入铺了粽子叶(或刷油)的模具里,表面铺葡萄干。
  • 3.放入蒸锅,大火将水烧开,中火蒸约60分钟至熟(具体所需时间根据年糕大小、厚度进行调整),用牙签插在年糕中心不带出白色的米糊即熟了。蒸制过程中若担心水量不够,可打开锅盖加热水,年糕不是馒头包子,不会回缩,但开盖时热量流失,蒸制时间会延长。
  • 4.出锅,完全冷却后脱模。
  • 5.切块。热的年糕很粘,不易切块,可在刀口上抹些油,切出的年糕整齐美观。
