#第四届烘焙大赛暨是爱吃节#田螺姑娘面包
每周末都会做点面包作为下一周的储备早餐,上次用这个模具做的面包闺女很喜欢,说是像田螺。
  所以这次我带着她兴冲冲的找个娃娃想做个田螺姑娘的面包;
  配方依旧是我喜欢的汤种方子,成品十分的柔软,放一夜都不会受影响。
  汤种的做法:普通面粉20克,水80克,放在厚底的奶锅里,小火慢慢的熬煮至粘稠,放凉后即是汤种。(注意:一定是先要放凉后再用,热的汤种会使面包提前发酵,影响成品)

  • 汤种80克
  • 精盐1克
  • 白糖20克
  • 黄油15克
  • 低筋面粉50克
  • 鸡蛋1个
  • 牛奶85克
  • 酵母粉3克

  • 1.把水、一个鸡蛋液一起倒入面包机桶;盐、糖,分别放在面包桶的一角,将称15克奶粉也放进去,然后再放入所有的粉类和汤种;最后放入酵母粉
  • 2.搅拌、醒面程序结束后,投入黄油,继续搅拌至面团光滑
  • 3.发酵至原来的两倍大
  • 4.取出面团轻轻按压排气,然后分成均匀的剂子,揉圆整形,静置10分钟左右
  • 5.静置好的面团折成椭圆形
  • 6.然后搓成尾巴长长的锥形
  • 7.取一根螺管,从尾端把搓好的锥形面条绕在螺管上
  • 8.全部做好的面包坯放在烤盘里,进行第二次发酵
  • 9.二次发酵完成后,表面刷蛋液
  • 10.烤箱预热190度,把面包放进去烤10分钟,表面金黄熟透即可取出
  • 11.烤好的面包晾凉后取出螺管
  • 12.娃娃清洗干净后把腿插入螺管的洞内,身子直立,用奶油霜做衣服装饰即可
