自制手工鱼丸
圣诞节了,很多朋友们都出去HAPPY了,我家儿子上学,没有时间,在家等他下自习,买了条草鱼做鱼丸,洁白的鱼丸,鲜美的鱼汤,让儿子大呼妈妈有才.

Steps to make 自制手工鱼丸

  • 1.准备好葱姜水
  • 2.草鱼一条
  • 3.头部用刀切开,抽出黑线,可以去除鱼的腥味

  • 6.由草鱼尾部开始下刀,左手按住鱼身,右手持刀贴着脊骨往前推,到头部下方

  • 8.从鱼身的肉中间摸到鱼腹上的大刺,用厨刀延着这一排刺的弧度一点点剔下,让这一排刺被整体的剔下来
  • 9.斜刀切连刀片
  • 10.放入加了食盐的清水中反复清洗
  • 11.去掉鱼皮
  • 12.去掉紧连鱼皮的红色鱼肉
  • 13.切成小块放入料理机中打成鱼茸
  • 14.倒入小盆中
  • 15.加少许盐、胡椒、料酒、葱姜水、蛋清
  • 16.适量玉米淀粉,顺着一个方向搅拌子鱼肉上劲
  • 17.从虎口处团成丸子,等锅中水响后,逐个下入鱼丸
  • 18.等鱼丸飘到水面,可以捞出
  • 19.放到鱼头汤中,美美享用
