抹茶蛋糕卷
其实。。。其实。。。我是想做蜜豆抹茶卷的。。。因为偷懒异想天开的用电饭锅做蜜豆,结果失败了,于是便有了眼前的蛋糕卷。。。

Details of ingredients

  • 鸡蛋3个
  • 低筋面粉60克
  • 细砂糖45克
  • 食用油38克
  • 牛奶48克
  • 1克
  • 柠檬汁少许
  • 抹茶粉7克
  • 淡奶油100克
  • 细砂糖(奶油中)2茶匙
  • 草莓3个

Steps to make 抹茶蛋糕卷

  • 1.蛋黄蛋白分离,分别放入干净无水无油的盆中
  • 2.蛋黄中加入盐和10克糖,搅打均匀
  • 3.分次加入油,搅打均匀
  • 4.分次加入牛奶,搅打均匀
  • 5.筛入低筋面粉,搅拌均匀
  • 6.筛入抹茶粉,搅拌均匀
  • 7.蛋白中滴入少许柠檬汁
  • 8.电动打蛋器打至出现大泡的时候开始加入35克糖的三分之一左右
  • 9.继续搅打至出现小泡时再加入三分之一的糖
  • 10.出现纹路后加入最后的三分之一的糖
  • 11.继续搅打至拉起打蛋器,有长而弯曲的尖角
  • 12.取三分之一的蛋白,加入到蛋黄糊中,用橡皮刮刀从下往上翻拌匀均(这里要注意不能用刮刀划圈搅拌,会严重消泡)
  • 13.在加入三分之一的蛋白,继续翻拌
  • 14.最后将蛋黄糊倒入蛋白盆中,彻底翻拌均匀
  • 15.将蛋糕糊倒入事先铺好油纸的烤盘中,在桌子上用力震几下排出气泡。烤箱预热180度,中层上下火,烤20分钟左右
  • 16.从烤箱取出后,将蛋糕倒扣在另一张油纸上,撕去原来铺在烤盘上的那张油纸。之后再将蛋糕翻面(图中被撕掉油纸的那面朝下)。我这油纸没撕好,后面又一点点把没撕好的地方蹭下来。。。
  • 17.淡奶油加糖打发好,涂于蛋糕上,加上适量草莓丁,趁蛋糕还有余温的时候卷起来,定型15分钟
  • 18.蛋糕的一侧铺上保鲜膜
  • 19.筛上糖粉,去掉保鲜膜就完成了
