Steps to make 虎虎生威之夹馍

  • 1.准备食材。面粉分200克和50克各一份。
  • 2.南瓜去皮切片,放入锅中蒸20分钟(个人用的是蒸烤箱蒸,不是烤哦)。
  • 3.处理食材:生姜大蒜辣椒一起剁成末,酸菜剁成末,挤干水分。猪肉把肥肉切丁,瘦肉剁成末,加入生粉揉匀。蒸好的南瓜用机器打成泥,也可以用勺子压,尽量细腻。
  • 4.酸菜倒入干净的锅里,小火炒干水分备用。
  • 5.锅里倒入少量油,放入肥肉丁熬出猪油。
  • 6.放入生姜大蒜辣椒末炒香。
  • 7.加入瘦肉,用锅铲快速划散肉末。
  • 8.加入味达美臻品料酒1大勺。
  • 9.味达美臻品特级生抽1大勺。
  • 10.味达美臻品耗油2大勺,翻炒均匀。
  • 11.加入酸菜翻炒,淋入少许淀粉水,翻炒均匀即可。
  • 12.馅料制作完成,用来下饭也是相当不错的。
  • 13.200克面粉加入2克酵母,白糖,南瓜糊约100克,搅拌均匀,倒入揉面垫中揉至光滑。
  • 14.50克面粉加入0.5克酵母,25克水,揉至光滑面团,分割出一半面团加可可粉少许,揉均匀。
  • 15.南瓜面团留出25克做耳朵,剩余平均分成6个剂子。
  • 16.白色面团用擀面杖擀平,压出小圆圈做鼻子,南瓜面团分2克一个,揉圆做耳朵,可可粉面团切丝和揉小圆点,做胡须和眼睛。
  • 17.南瓜剂子揉匀,擀面杖擀成牛舌状,刷薄薄一层食用油,防粘。
  • 18.刷好油后,上下对折。
  • 19.拼脸:耳朵粘上,用牙签压一下。眼睛鼻子照图片一样粘上。鼻子先用牙签扎一些洞洞,再粘上,枸杞半个做舌头,胡须和王字用手搓条,粘上。
