草莓酱夹心排包
自制的草莓酱,可着劲儿地往面包里裹。松软的小面包,配着甜甜的草莓酱还真可口,诱人。

  • 新良原味蛋糕粉50克
  • 耐高糖干酵母3克
  • 白糖20克
  • 清水110克
  • 鸡蛋55克
  • 黄油25克

Steps to make 草莓酱夹心排包

  • 1.面包粉、蛋糕粉、鸡蛋、白糖、清水、干酵母同入面包桶内
  • 2.启动和面程序,待面团揉到光滑时,入软化好的黄油,继续启动和面程序
  • 3.待面团揉至能拉出稍具透明的大片薄膜时,可将面团收圆,入桶中进行基础发酵,发酵时可盖上湿布,防止表面干皮
  • 4.待面团发至原来的2.5倍时,手指蘸干粉,在面团顶部戳洞,不回缩不塌陷,发酵完成
  • 5.面团取出,置于案上,分成6等份,滚圆,松弛10分钟
  • 6.自制的草莓酱准备好
  • 7.取其中一个松弛好的面团,擀成椭圆形,均匀地涂抹上草莓酱
  • 8.卷成卷,收口朝下,捏紧
  • 9.其它的面团依次处理,入不粘烤盘中,盖保鲜膜,进行二次发酵
  • 10.待面团发至二倍大时,表面刷蛋液,烤箱开始预热180度
  • 11.发酵好的面包生坯入预热好的烤箱中,180度,上下火,中层,20分钟左右,如果喜欢表皮浅色,可以在上色后盖上锡纸,如果喜欢厚皮可以不盖
  • 12.小排包小巧玲珑,很可爱
  • 13.里面的组织很不错,草莓酱甜甜的,配着吃很香
