淡奶油古早面包
一款经得住历史考验的淡奶油古早面包、原色原味的老式面包,也是我孩提时代思念,方子源于“自由”我略加改动,算得上我家的桌子常客,朴实无华、朴素无比都包含在其中,自从我遇见了“自由”才开始了面包,从而走向烘焙!方子推荐给大家有空试试做了!

  • 酵母6g
  • 牛奶250g
  • 高筋面粉210g
  • 低筛面粉90g
  • 细砂糖30g
  • 高筋面粉210g
  • 低筋面粉90g
  • 细砂糖80g
  • 5g
  • 鸡蛋一个
  • 奶粉20g
  • 淡奶油120g
  • 黄油45g
  • 蛋液少许

Steps to make 淡奶油古早面包

  • 1.250g牛奶加入6g酵母搅拌均匀静置几分钟,倒入210g高筋面粉、90g低筋面粉和30g细砂糖再次搅拌均匀,放入冰箱冷藏一夜;
  • 2.第二天取出,面团的状态大约是原来的3或者4倍大,并且扒开有明显的蜂窝状;
  • 3.放入除黄油以外的主面团材料;一个鸡蛋、120g淡奶油、70g细砂糖、210g高筋面粉、90g低筋面粉、5g盐和20g奶粉将面团揉至光滑;
  • 4.加入黄油继续揉至完全扩展阶段;
  • 5.取出面团收圆、静置不到半小时;
  • 6.分成9个小面团揉圆、盖上保鲜膜松驰15分钟;
  • 7.松弛结束后,取一个小面团压扁擀成长方形,卷成长条,依次完成每一个;
  • 8.取一个长条搓长,重叠后向上扭转四下,一头插入像环一样的另一头中,收口向下,依次完成每一个;
  • 9.排入28厘米X28厘米烤盘中,发酵不超过二倍大(天气很好我大概二发不到半个小时;
  • 10.表面刷一层蛋液,放入预热170度烤箱中层,上下火35分钟左右;
  • 11.出炉了!
