Steps to make “孔雀开屏鱼”喜迎新春

  • 1.买回来的海青班清洗干净。
  • 2.准备好配料。
  • 3.将清洗干净的青班先用刀均匀的切一刀刀,不要切断鱼身。
  • 4.用敲肉小锤敲着刀上角将鱼背骨头敲断。
  • 5.然后用厨用刀将鱼块剪好一片片,记住,鱼片之间还要连着。
  • 6.将姜丝,酒,盐,生抽腌制处理好的鱼。
  • 7.将配料按自己的要求切小片(如图所示)
  • 8.按自己的想象力摆盘。
  • 9.放入烧开水的蒸锅蒸4分钟(由于鱼小而且切得很薄,所以蒸的时间很短)然后熄火闷3分钟。
  • 10.用小锅煮生抽加水和糖。然后淋上蒸好的鱼上。(如果有蒸鱼酱油就直接淋上)
  • 11.将姜丝和香葱丝摆放在鱼背上,烧开一些油,淋在姜丝和香葱丝上即可。
