广东的年夜饭,如果没有猪手这个菜,就感觉不到过年的气氛,用它来做菜多数也是图个吉利,比如发财就手,招财进宝,大展宏图、横财就手等等这些美名都出于猪手这道菜,各家做法有所不同,愿景却是一样的~记得小时候,年二十八这天全家人就开始忙碌开了,妈妈忙着做各种小点心,爸爸则忙着杀鸡杀鸭、斩肉、焖肉。比较粗重的活爸爸全包了。当然准备工作还更早,做点心的原材料磨糯米粉和大米粉早早就备好了,几个孩子则在边上打打下手,一家人此刻围在一起,做美食,谈天说地,偶尔也嬉戏打闹一下,妈妈则吓唬我们,过年了,你们要乖乖的听大人的话,不许胡来,尊老爱幼,说吉利话,来年才会顺顺利利。年幼的我们当时确实很相信父母的嘱咐,也遵守了好几天,往后的几天慢慢淡化了家长的嘱咐,玩的更乐了~~自从我们长大各有各的家庭后,这种场景变成了一种回忆,每当快到过年的时候,想必父母的心情更是如此吧,希望一家人能团团圆圆吃一顿年夜饭。因各种原因,这种愿望较难实现,所以最大的体会是现在的年夜饭食材是比以往丰富了不少,却怎么也找不到儿时的味道了,说起这些,有点惆怅~

  • 猪手1000克
  • 冰糖80克
  • 客家黄老酒半碗
  • 1块
  • 陈皮1片
  • 南乳1块
  • 柱候酱1汤匙
  • 酱油2汤匙
  • 老抽1汤匙
  • 蚝油1汤匙
  • 鸡粉少许

Steps to make 招财猪手

  • 1.准备食材:猪手、冰糖、柱候酱、黄老酒、南乳。(猪手洗净、斩件、刮干净猪手上的细毛)
  • 2.烧开一锅水,放下姜片和陈皮、加上一汤匙盐。
  • 3.调复合酱汁:老抽一汤匙、酱油2汤匙、蚝油1汤匙混合。(下称复合酱汁)
  • 4.水开后倒入猪手焯煮10分钟。
  • 5.捞起用冰水浸泡片刻,没有冰水用冷水代替。
  • 6.捞起沥干。
  • 7.热锅,放适量油,下南乳煎炒香。
  • 8.倒下猪手翻炒片刻。
  • 9.倒下柱候酱、冰糖。
  • 10.加入复合酱汁,保持大火翻炒6分钟左右。
  • 11.倒入黄老酒。
  • 12.加上足量的清水煮开,遮上锅盖调成中火焖80分钟。(5饭碗左右的水量)
  • 13.焖至汤汁剩下少许,调入鸡粉、即可关火铲起~
  • 14.脆皮、筋道~爽而不腻~
