小米黄金肉丸
这道菜的灵感来自“糯米珍珠丸子”,但糯米浸泡的时间长,用小米代替糯米,浸泡和蒸制时间都较糯米的短,颜色金黄,味道也不赖。

糯米丸子叫珍珠丸子,那黄澄澄的小米丸子就叫黄金丸子呗。这造型和颜值很符合春节的热闹氛围,讨个口彩也让人心花怒放。

小米的营养价值很高,其中的蛋白质含量和人体必需氨基酸的含量都高于稻米和小麦。小米中铁、锌、铜、镁等矿物质的含量均超过大米和小麦,维生素B1的含量居粮食类作物之首,维生素E的含量也很丰富;小米还含有其它粮食类作物所没有的β胡萝卜素。

在民间,小米也一直是补虚的好食材。产妇和体弱的人恢复体力的首选小米。熬粥、蒸饭是常见的食用方法,今天我用它做菜,不但增加了新吃法,端上桌也是喜气洋洋。

  • 土豆半个
  • 大葱1段
  • 玉米淀粉8克
  • 小米辣半个
  • 香葱末少许
  • 蚝油15克

Steps to make 小米黄金肉丸

  • 1.小米淘洗两遍,用凉水浸泡2小时。
  • 2.瘦肉馅准备好;用量可随食用量调整。
  • 3.大葱切末,土豆切末;少许盐、蚝油同入肉馅中。
  • 4.加一小勺玉米淀粉充分搅拌,不要加水。
  • 5.浸泡小米的水倒掉。
  • 6.取适量肉馅,在双手间倒几下,成较密实的肉丸。
  • 7.肉丸在小米中滚几圈,裹满小米,用手再轻轻按压结实。
  • 8.裹满小米的肉丸摆放在盘中。
  • 9.入凉水蒸锅,大火上汽后蒸10分钟,出锅后点缀小米辣圈和香葱末即可。
  • 10.小米黄金肉丸,颜色金黄,味道清香不腻口!
