今年疫情期间响应国家号召 实行就地过年,国际庄里迎除夕,年夜饭准备八菜一汤,都是荤素合理,鱼肉蛋菌菜搭配的有寓意、好彩头的健康饮食,除夕菜谱如下:
焦香手把排(执掌乾坤)
肥牛金针菇(金牛送瑞)
干豆腐卷杂蔬(增福增瘦)
蒜蓉开边虾(花开富贵)
皮蛋黄瓜卷(疫去春来)
鸡蛋福袋饺(财源广进)
清蒸螃蟹(蒸蒸日上)
糖醋鲤鱼(鲤跃龙门)
金汤小米参(锦绣安康)
今天介绍第五道:蒜蓉开边虾

  • 粉丝2把
  • 4头
  • 食盐1勺

Steps to make 蒜蓉粉丝开边虾

  • 1.粉丝温水泡软,略硬一些,不要泡过了,还要留出蒸的余地。
  • 2.大蒜打碎备用。
  • 3.取2/3的蒜蓉洗一下,去掉蒜胶,免得炸金蒜的时候容易糊,颜色不漂亮。
  • 4.洗过的蒜碎沥干攥出水分。
  • 5.虾剪掉虾枪,用刀从中间切开挑出虾线,尾巴不用切断,清洗后备用。
  • 6.泡好的粉丝铺在盘底。
  • 7.把洗好的虾控一下水分,尾巴朝上整齐的摆在粉丝上。
  • 8.锅内放油,凉油下入洗好的蒜蓉。
  • 9.小火慢慢炸酥蒜蓉,变色后加入一勺盐。
  • 10.炒成金黄酥脆的金蒜。
  • 11.把炒好的金蒜倒入生蒜蓉中。
  • 12.加入一勺蒸鱼豉油。
  • 13.搅拌均匀备用。
  • 14.把蒜蓉汁浇在虾和粉丝上面。
  • 15.上锅蒸10分钟。
  • 16.蒸好后,倒出蒸虾的汤汁,撒入葱花,浇上热油即可。
