【青椒炒猪肝】
为什么猪肝能补血,并不是因为它看起来血乎拉唧,所以补血效果好。

恰恰相反,猪肝里的血是最不能要的,因为猪肝是猪体内最大的解毒器官,它里面的大量血液是含有部分有害物质的,因此买回来的猪肝应用自来水反复冲洗,再放在水中浸泡30分钟以上,直至洗猪肝的水基本没有血色,才可烹调食用,“猪肝补血,吃前要“去毒”。



猪肝补血,是因为猪肝中含铁量较高,而铁是合成血红蛋白不可或缺的元素,血红蛋白是负责运载氧的一种蛋白质,补铁能够增加人体内血红细胞及血红蛋白含量,从而起到补血作用。

有人认为猪肝是营养丰富的补血美食,孕妇、儿童要多吃,但也有人反对说,动物肝脏聚集了很多毒素还有高胆固醇,不能多吃。首先可以肯定的是,动物肝脏营养极其丰富,其他食物很难代替。动物肝脏中含有丰富的蛋白质,每百克猪肝含蛋白质21.3克,是猪肉的两倍,另外,动物肝脏堪称食品中的“维生素A之王”,所以可以放心吃,但凡事要有度,再好的东西超过那个度,就物极必反了。

Steps to make 【青椒炒猪肝】

  • 1.猪肝洗净后,片成2——3mm厚的片,在水里反复冲洗。
  • 2.然后清水浸泡30分钟,换水继续洗至无血水。
  • 3.用笊篱捞出,控干水分。
  • 4.准备配料:青椒、蒜苗、葱、姜。
  • 5.调入半勺盐、干淀粉一勺、一勺生抽、半勺醋、两勺料酒、半勺白胡椒粉、花椒4、一点白糖、葱姜片。
  • 6.搅拌均匀,码味。
  • 7.准备配菜,蒜苗切成小段,青椒切成菱形。
  • 8.起锅热油,油稍微多一些,油要热,烧至7、8成开始冒青烟时,倒入码好味的猪肝片。
  • 9.大火,快速翻炒,倒数5秒,或者用眼睛观察,当猪肝表面刚刚开始发白,有一些还没有变白,略带肉粉色时,就马上盛出。
  • 10.锅内留底油,先下青椒段和蒜苗段白色的部分煸炒1分钟。
  • 11.倒入炒好的猪肝,大火快炒几下。
  • 12.关火!撒入蒜苗叶,利用余温将蒜苗叶烫至断生即可,一点味精,装盘!
