葡式榴莲挞
用葡式蛋挞的配方,加了熟透的榴莲果肉,绵软嫩滑,榴莲四溢*。

Steps to make 葡式榴莲挞

  • 1.纯牛奶,炼乳,蛋黄一个(另两个没拍上),淡奶油。
  • 2.绵白糖20克。
  • 3.又加的两个蛋黄。(此配方共用了三个柴鸡蛋蛋黄)。
  • 4.纯牛奶135克,淡奶油125克,淡乳适量,绵白糖或糖粉加入,搅拌均匀。(如果用砂糖,需小火加热至糖溶化,再放凉备用)。
  • 5.蛋黄打散,倒入牛奶混合液中。
  • 6.混合均匀。
  • 7.20克左右低粉过筛。
  • 8.做好的蛋挞液过筛。此为葡式蛋挞水。我用此蛋挞水另外做了8个葡式蛋挞。
  • 9.榴莲果肉用勺压成泥。追求更细腻口感可用搅拌机跟纯牛奶打成榴莲奶泥。
  • 10.榴莲泥放蛋挞液中。搅匀,有榴莲肉块也没关系。
  • 11.倒入蛋挞皮中,八九分满。
  • 12.烤箱200度预热5分钟,下层上下火200度烤20分钟至焦糖点出现即可。
