包瓜肉糜嵌鲫鱼
肉嵌鲫鱼,相信很多人吃过,也会做,但是,我家乡的肉嵌鲫鱼与众不同---
就因为在肉馅里混了“包瓜”。
何为包瓜?--即是用甜面酱腌制的苫瓜。(一种专门用来腌制酱瓜的瓜,样子象黄瓜,但是大的多,煮着吃不好吃,只能腌。)
其实,知道这个做法的人已经不多了,这种做法非常古老,以前,也只有大户人家才会这么做的.
就是现在启东很多的“农家菜”,有肉嵌鲫鱼,但是没有放包瓜的。

Steps to make 包瓜肉糜嵌鲫鱼

  • 1.准备;鲫鱼去鳞去鳃去肚,洗净,猪肉洗净剁碎,包瓜去籽,洗净剁碎。
  • 2.把肉糜,包瓜,用盐,料酒,鸡精,姜末,葱花,淀粉搅拌均匀。
  • 3.塞进鲫鱼肚里。
  • 4.鲫鱼两面拍上淀粉,放入锅里煎成金黄。
  • 5.放料酒去腥,加适量清水,加糖,姜,蒜,辣椒。
  • 6.加老抽,醋,大火煮开,中火煮12分钟.
  • 7.加盐,中火煮2分钟。
  • 8.加鸡精,胡椒粉,葱段。
  • 9.包瓜肉馅嵌鲫鱼好了。
