清新味美的莲蓬豆腐
‘莲蓬豆腐’是西北豆腐菜中的校校者。是西北思乡风味名馔。近年,海外侨胞游览、省亲者,多点食此菜,以表其  对故国、故乡的深情。豆腐营养丰富,素有“植物肉”之美称。豆腐为补益清热养生食品,常食之,可补中益气、清热润燥、生津止渴、清洁肠胃。更适于热性体质、口臭口渴、肠胃不清、热病后调养者食用。豆腐不足之处是它所含的大豆蛋白缺少一种必需氨基酸——蛋氛酸,若单独食用,蛋白质利用率低。我搭配了鳕鱼可以起到互补作用。

Steps to make 清新味美的莲蓬豆腐

  • 1.准备好所有材料。
  • 2.娃娃菜切开,留根部。
  • 3.用小刀从外向里依次切成花瓣状。备用。
  • 4.葱姜切碎,倒入料酒侵泡10分钟。滤去葱姜备用。
  • 5.豆腐用刀碾碎。
  • 6.把鳕鱼用刀刮成鱼蓉。
  • 7.刮好的鱼蓉加入蛋清和泡过葱姜的料酒 胡椒粉。
  • 8.把鱼蓉搅打至上劲。
  • 9.加入豆腐蓉和淀粉搅拌均匀后加入盐,继续搅打上劲。
  • 10.搅拌好的豆腐鱼蓉分别倒入抹过油的容器中。
  • 11.在豆腐鱼蓉上面摆放上豌豆。
  • 12.隔水蒸8分钟。
  • 13.蒸好后,用小刀轻轻取出莲蓬豆腐。
  • 14.锅中加入鸡汤,下入切好的娃娃菜莲花。
  • 15.小火煮至莲花熟透,捞出放入盘中间。
  • 16.莲花周围码放蒸好的莲蓬。
  • 17.剩下的鸡汤加入盐 鸡精 勾薄芡,淋入麻油。
  • 18.把芡汁均匀的浇在莲蓬上即可。
