一次做了太多的粽子这几天早上基本全都是粽子,中午也是大米饭,格外想念小麦的味道……
昨天上海温度据说突破三十度,终于不用担心发面时间太长产生过多水分做出来口感不好的面包了,中午最热的时候二话没说做个面包先~
配方比较简单,但是真的很好吃!

  • 高筋粉180g
  • 低筋粉40g
  • 砂糖45g
  • 橄榄油30g
  • 食盐2.5g
  • 奶粉8g
  • 清水95g
  • 蛋清25g
  • 酵母4g

Steps to make 小排包

  • 1.30g橄榄油加入面包桶里面
  • 2.加入25g鸡蛋清
  • 3.先加入2.5g食盐
  • 4.加入95g清水
  • 5.加入8g奶粉
  • 6.加入45g砂糖
  • 7.然后加进去180g高筋粉和40g低筋粉
  • 8.在面粉上面挖一个坑,加入4g酵母
  • 9.然后打开一个欧式面包程序,开始揉面
  • 10.到快两个小时的时候,也就是第二次发酵的时候,按一下暂停,取出来面团
  • 11.分割成六小份,按扁排气
  • 12.然后整理成圆球形
  • 13.放回面包桶里面,继续刚刚没有结束的程序就OK啦!
