黑全麦豆沙包
“ 清肠食谱 ”年过完了,孩子们也快开学了,估计小伙们又在为早餐吃什么而发愁了吧?哈哈,不用愁,来跟着我一起做豆沙包子吧,再加些黑全麦粉,做出来的豆沙包子美味且更营养,无论搭配牛奶、豆浆或是白粥,都是极棒的。

  • 酵母5克
  • 清水250克
  • 黑全麦粉100克
  • 中筋面粉400克
  • 红豆沙500克

Steps to make 黑全麦豆沙包

  • 1.用50克清水,将5克酵母,搅拌至融化。
  • 2.称好面粉和黑全麦粉,然后将酵母水和余下的200克清水倒入面包桶。
  • 3.将面粉也倒入面包桶,用筷子搅拌成絮絮状。
  • 4.把桶放入面包机,揉成一个光滑面团,然后合上盖子进行室温发酵。
  • 5.发酵至2倍大小时,用手指蘸面粉从顶部戳下去,表面不塌陷不回缩即可。
  • 6.拔开面团,里面全是密集的气孔就说明发酵到位了。
  • 7.取出面团按压排气,再重新揉至和发酵前差不多大小。
  • 8.然后把面团搓成长条。
  • 9.切成大小均匀的面剂子。
  • 10.将每个小剂子揉圆,再擀成中间厚四边薄的圆片;其它剂子用保鲜膜盖上,防止风干。
  • 11.在擀好的剂子上面,挤上适量的豆沙馅。
  • 12.包成自己喜欢的形状,再盖上保鲜膜二次饧发10分钟。
  • 13.用手指轻轻摁下:不会明显回弹或拿在手上感觉轻飘飘地,就说明饧发到位了,然后把它们分别放在蒸屉上。
  • 14.冷水大火蒸,上汽后转中火蒸12~分钟左右,关火。
  • 15.焖3分钟开盖,包子不会塌陷也不会回缩。
  • 16.美味营养的黑全麦豆沙包子就做好了。
