经典菜系~宫保鸡丁
宫保鸡丁系汉族特色名菜,属川菜系。选用鸡肉为主料,辣椒等辅料烹制而成。红而不辣、辣而不猛、香辣味浓、肉质滑脆。据传,此菜创始人丁宝桢,贵州织金人,历任山东巡抚,四川总督,常以家乡此菜宴请宾客,流传至今。由于其入口鲜辣,鸡肉的鲜嫩配合花生的香脆,广受大众欢迎。

Steps to make 经典菜系~宫保鸡丁

  • 1.准备鸡胸肉,黄瓜,花生,胡萝卜,葱姜蒜。
  • 2.鸡胸肉切块,黄瓜胡萝卜分别切丁。
  • 3.先把胡萝卜焯水,花生用少量油炒香。
  • 4.鸡块中加盐,糖,白胡椒粉,鸡精,生抽,玉米淀粉进行抓拌。
  • 5.最后加入2勺食用油混合均匀。
  • 6.调个料汁:2勺生抽+1勺蚝油+1勺白糖+2勺清水混合。
  • 7.锅中放入适量的油,把鸡肉放进去炒熟盛出来。
  • 8.留少许底油,放2勺豆瓣酱炒出红油,加葱姜蒜炒香。
  • 9.倒入鸡肉,胡萝卜,黄瓜,花生翻炒。
  • 10.倒入料汁,烧1分钟关火。
  • 11.开胃下饭的宫保鸡丁制作完成,配上一碗米饭,妥妥滴。
