    Steps to make 醋焖带鱼

    • 1.带鱼收拾干净。
    • 2.斩成小段,均匀地拍上一层干淀粉。
    • 3.拖上一层鸡蛋液。
    • 4.把锅烧热,加入适量油,油温六成热时,下入带鱼煎制。
    • 5.带鱼煎制表面变硬,稍有金黄色即可捞出。不用煎制全熟。
    • 6.锅中留少许底油,下入煎好的带鱼,放几粒花椒,加入适量白酒(下白酒时应关火)。
    • 7.再烹入一小碗米醋,调入少许酱油。
    • 8.加入葱姜蒜,蒜的量稍大一点。
    • 9.加入少许热水、盐、糖定好味。下入青红椒、香菜,用中火烧十几分钟。
    • 10.把带鱼捞出装盘,将剩余的汤汁收浓浇在鱼上即可。
