Steps to make 泡椒牛肉粉丝

  • 1.牛肉最好用里脊肉或腿肉,切得时候要横着切。也就是说,刀和牛肉的纹理呈90度垂直来切。
  • 2.切好的牛肉片。
  • 3.将牛肉放入大碗中,加入少许盐,料酒,生姜,分次加入适量红薯淀粉,将牛肉和调料抓匀。
  • 4.抓匀的牛肉片均匀地裹上一层淀粉,用力抓牛肉没有水流出。
  • 5.平底锅烧热,(锅一定要烧热)倒入油,油要稍微多一点,倒入牛肉,快速翻炒均匀,牛肉变色即可关火。
  • 6.炒好的牛肉表面比较干,碗底没有汤汁,但是牛肉还是嫩的。
  • 7.粉丝用开水提前泡软,用厨房剪刀剪短一点,沥干水分。
  • 8.卷心菜洗净,切去根,再切丝。
  • 9.将小米辣泡椒,红辣椒和大葱分别切圈备用。
  • 10.将一汤匙生抽,一汤匙蚝油和半汤匙酱油调一个碗汁,备用。
  • 11.平底锅烧热,倒入油,放入泡椒和葱花炒出香味。
  • 12.倒入卷心菜炒匀。
  • 13.卷心菜炒软后,加入粉丝和适量牛肉,倒入提前调好的碗汁,搅拌均匀即可。
