红曲拉花香草蛋糕

由于要急做一批蛋挞,调完葡式挞液后剩下了N多个蛋清;本着不浪费原则需尽快消化,所以就临时调配:多蛋清+少蛋黄配方来试做蛋糕;更为关键的---“放弃使用烤箱”,而是“改用电饭煲”来完成的;哈哈:蛋糕是完全按照我的预想效果出来的哟;漂亮的拉花、浓浓的香草味,真的真的好看也好吃~~~

  • 蛋黄2个
  • 牛奶40克
  • 白糖60克
  • 蛋清176克
  • 芥花油30克
  • 玉米淀粉15克
  • 低筋面粉60克
  • 食盐1克
  • 红曲粉2克
  • 香草精2克
  • 柠檬汁少许
  • 芥花油少许

Steps to make 红曲拉花香草蛋糕

  • 1.盆中倒入蛋黄、16克蛋清、15克白糖拌至乳化状
  • 2.倒入牛奶拌匀
  • 3.倒入芥花油拌匀
  • 4.筛入玉米淀粉、低筋面粉再翻拌均匀
  • 5.滴入2克香草精拌匀后,放一旁备用
  • 6.在剩余160克蛋清中:滴入食盐、柠檬汁
  • 7.分三次加入剩余45克白糖
  • 8.打至硬性发泡
  • 9.取出电饭煲内胆:四周刷层芥花油,插电预热5分钟
  • 10.取1/3蛋白糊至蛋黄糊中翻拌均匀
  • 11.再回倒至蛋白盆中、拌匀成蛋糕糊;倒少许蛋糕糊与红曲粉拌成红曲糊备用
  • 12.将1/2蛋糕糊至预热好的电饭煲内胆中,接着挤少许红曲糊
  • 13.再将剩余蛋糕糊倒入、轻震几下震出大气泡后挤入红曲糊
  • 14.用牙签勾勒出喜欢的拉花图案
  • 15.放入电饭煲、选择蛋糕模式,时间为50分钟
  • 16.结束后闷10分钟,再打开电饭煲上盖
  • 17.将蛋糕倒出放至案板上
  • 18.表面不塌,内部组织也不错哟
