玉米鲜肉月饼
前几天做过鲜肉苏式饼,剩了一半的肉馅。
因为比较对自己口味,所以想继续做,但改变一下口味。
加了些玉米做馅,真的更好吃了,还没完全放凉我一口气吃了两个

  • 中筋面粉100g
  • 猪油38g
  • 清水25g
  • 猪肉馅90g
  • 玉米粒40g
  • 2g
  • 白糖2g

Steps to make 玉米鲜肉月饼

  • 1.所有材料
  • 2.水油皮料(面粉50g,猪油15g,清水25g,盐2g,白糖2g)
  • 3.油酥料(面粉50g,猪油23g)
  • 4.分别把水油皮和油酥混合揉成团(水油皮需多揉几分钟),再盖上保鲜膜或湿布醒半小时左右
  • 5.把醒过的水油皮和油酥分别平均分成4等份
  • 6.再把水油皮揉几下,擀成圆形,把油酥放上
  • 7.慢慢的合拢,把油酥包住,把收口处捏紧
  • 8.收口朝下,稍为按扁
  • 9.擀成舌状
  • 10.再轻轻由上往下卷起,再次盖住醒十分钟
  • 11.再用同样方式擀成舌状
  • 12.再卷起,再静置十分钟。再重复一遍上面动作
  • 13.把玉米粒焯水
  • 14.放进猪肉馅里拌匀(我的肉馅已经提前调好味了,所以不需加其它料)
  • 15.接着用手协助,先整成一小圆,再擀成中间稍厚,四周薄的圆面皮,放上适量调好的玉米肉馅
  • 16.慢慢收口捏紧
  • 17.收口朝下,再轻轻擀扁一些便可
  • 18.把所有的面皮做好,放烤盘里
  • 19.烤箱提前预热,放入烤箱上下火160度烤20分钟(稍定型后在上层盖锡纸),再继续上火10分钟。
