唯我独爱的蔬菜----【豆豉炒苦瓜】
苦瓜虽然是我们生活中很普通的食材,但它小小的体内不但含有大量的维生素C,而且蛋白质的含量也非常的丰富,是一种药食两用的好食物,常食能清热除火,祛脂降压,利尿消肿、养颜护肤等,不但营养健康,而且还是一种很好的减肥食材。
由于它的苦味,家人不是特别爱吃,所以我每次都腌一下再炒,然后搭配着一些其他的食材,这样比较不会苦。豆豉就是其中很好的一种。

  • 食盐3茶勺
  • 白糖1/2茶勺
  • 生抽少许

Steps to make 唯我独爱的蔬菜----【豆豉炒苦瓜】

  • 1.苦瓜洗净。
  • 2.对半切开,用薄的铁勺子刮去里面的白瓤。
  • 3.切成薄片放入碗中,加入3茶勺的食盐。
  • 4.戴上手套抓至苦瓜变软、出汁,腌制十分钟左右,拧去多余的水份。
  • 5.准备好配料。
  • 6.红椒切丝,葱绿切段,豆豉洗净稍微碾一下;葱白、生姜、蒜瓣分别切成末。
  • 7.起锅热油,下入葱姜蒜末煸香。
  • 8.下入碾碎的豆豉。
  • 9.中小火炒香。
  • 10.转大火,加入腌好洗净的苦瓜和红椒丝,翻炒几下
  • 11.加入适量泡椒,调入少许生抽和1/2茶勺的白糖,翻炒均匀。
  • 12.出锅前加入葱段增香即可。
