长白糕
某天,老公吃着我买的牛舌饼,吐槽着为啥有股陈皮味儿?然后说起他小的时候吃的一种点心叫长白糕,也是长条状的,问我吃没吃过?恩?!没吃过*!!
突然间他特别想吃,然后,我就学了一下,很简单,他说做的有点意思,挺像的,现在分享给大家*
ps:辅料可以用白醋或柠檬汁代替

  • 低筋面粉104g
  • 奶粉1勺
  • 朗姆酒1滴
  • 香草精2滴

Steps to make 长白糕

  • 1.准备食材。
  • 2.蛋白蛋黄分别放在两个无水无油的盆里,蛋黄加20g白糖,1滴香草精,搅拌均匀。
  • 3.搅拌均匀,打发成淡黄色,备用。
  • 4.蛋白分三次加白糖,一共加40g白糖,打发。
  • 5.白糖一定分三次加入,最后加1滴香草精和1滴朗姆酒,去腥用的,没有可以放柠檬汁或者白醋,或者干脆不放。一定打盛硬性发泡(就是拉出一个角儿立住不弯曲就可以了)。
  • 6.把蛋清蛋黄液混合,翻拌几下。
  • 7.不用翻拌太仔细,大概均匀就可以了。
  • 8.然后放1勺奶粉 图①,将面粉分三次加入蛋液,图②③④,翻拌大概均匀就可以了。
  • 9.把蛋液灌进裱花袋里。
  • 10.随便减个口子,就挤在烤盘里(烤箱提前预热5分钟,上下火160℃),挤成长条状就可以,注意间距,上下火170℃,中位,烤25分钟。
  • 11.出锅,凉凉后撒上白砂糖,一定凉凉后撒,才能粘住。
  • 12.完成,这种有点黏,应该是加了奶粉的缘故,亲可以试试不放奶粉的。
  • 13.也可以烤火大一点,会变成脆脆的蛋仔小饼干,味道也不错呦。
