Thyme chicken with tomato sauce 茄汁鸡肉
关于茄汁的原料,是用番茄、番茄酱好呢?no no no~ 都不是啦,而是不起眼的番茄罐头(Canned tomatoes)。选择罐装番茄的原因有二,一是番茄可于番茄原酱媲美,滋味较新鲜番茄更加浓郁;二是保留了番茄固型果肉,可使酱汁更具质感。罐装番茄有切块和整只番茄之分,也有去皮与留皮之别,这道菜适合使用切块的,不过手头没有,就用了整只的番茄,后面搅碎即可,也无大碍。另外早晨顺手取了百里香嫩枝,买了些鲜蚕豆,这就开始吧!

    Steps to make Thyme chicken with tomato sauce 茄汁鸡肉

    • 1.食材表:• 鸡肉• 蚕豆• 百里香• 洋葱• 罐装番茄• 杏鲍菇• 盐• 橄榄油• 现磨黑胡椒• 高汤
    • 2.将鸡块拭干,以盐涂抹,冰箱内放置2个钟头或隔夜。取出后拭干鸡块两面(不易起油粘锅),鸡皮向下在锅中煎至金黄色;
    • 3.当一面煎至金黄色后翻面再煎;
    • 4.将鸡肉盛出待用,油留于锅内;
    • 5.煎香洋葱,至软嫩且略带焦糖色;
    • 6.倒入番茄并翻炒出香,软嫩后压碎;
    • 7.倒入蚕豆一同翻炒;
    • 8.将鸡肉放回锅中,加入杏鲍菇块,再加入高汤、黑胡椒和百里香,盐调味,沸腾后上盖小火炖煮即可;
    • 9.炖至鸡肉软嫩,开盖收汁即可享用,配上面包就最合适了~
