自制神仙豆腐
今天在高人指点下,第一次动手做神仙豆腐。
神仙豆腐的原材料就是用二翅六道木的树叶所做而成的。做法倒是简单,但灰汁水的用量需要经验。将采回的叶子洗净、晾干,放到盆中用开水烫软,装到布袋子里加水用双手重复揉搓、捣碎,直至叶子成为糊状,过滤出的叶汁倒出到盆中,加少许豆秆灰汁拌匀,凝固后即成“豆腐”。

    Steps to make 自制神仙豆腐

    • 1.鲜嫩的二翅六道木树叶。
    • 2.摘下叶子,清洗控水。
    • 3.放到盆子里,倒入适量开水,搅拌均匀待叶子变软。
    • 4.软后的叶子倒倒布袋子里。
    • 5.盆子里加少量水,揉搓叶子到感觉汁液有点粘稠的状态,把过滤出的汁液倒到另外干净大盆里,重新加水继续揉搓,重复这个动作到叶子变糊状,基本是剩下叶脉即停。
    • 6.全部揉搓出的汁水。
    • 7.过筛的豆秆灰适量。
    • 8.加少许开水调匀。
    • 9.豆秆灰汁作为卤水使用,边搅拌汁水,边慢慢加入灰汁,待手感粘稠即可。
    • 10.待冷却后就凝固成“豆腐”了。
    • 11.做好的神仙豆腐颜色翠绿,Q弹软嫩。用刀切成小块,浇上生抽、蒜泥、香醋和辣椒(不喜辣的省略),即成为一道凉拌美食。它吃起来味道清冷爽口,是炎夏天消暑降温的绿色食品。也可以加姜蒜炒起来吃,则是另一种美味了。
