泰式虾饼
我家女儿每次去泰式餐厅必点的一道菜,放假回来了,正好家里有大虾仁,所以决定自己试试!虾饼做好后感觉真的不错,因为做的比较多,半成品冷冻后第二次炸着吃,一样美味!

  • 鸡粉5克
  • 蛋清1个
  • 生粉20克
  • 胡椒粉3克
  • 1棵
  • 姜片2片
  • 鸡蛋2个

Steps to make 泰式虾饼

  • 1.制作虾胶:的冷冻大虾仁解冻后,去泥肠洗净后挤干水分
  • 2.取2/3的虾仁放入料理机搅打成虾泥
  • 3.1/3用刀压扁剁成粗颗粒的虾泥
  • 4.把2种虾泥混合
  • 5.加入适量盐
  • 6.加葱姜水
  • 7.加20克生粉
  • 8.加胡椒粉
  • 9.加1个蛋清
  • 10.搅拌均匀,要按一个方向搅至虾泥开始蓬松,盖上保鲜膜,送入冰箱冷藏30分钟-1小时左右
  • 11.制作虾饼:这是准备好的主要食材,取50克虾滑打成球状
  • 12.均匀裹上淀粉
  • 13.裹上蛋液
  • 14.最后裹上面包糠后,稍微压压扁,就是虾饼半成品了,做的量大可以放冰箱冷冻保存
  • 15.取一小锅加热色拉油,放人虾饼炸至浮起即可
  • 16.捞出吸油,配上泰式甜辣酱
