Steps to make 宫保鸡丁

  • 1.花生米炸熟备用
  • 2.鸡肉洗净去掉残留的脂肪。
  • 3.将鸡肉捶松。(这步不能少,捶松的鸡肉会更滑嫩入味)
  • 4.将鸡肉切成一厘米见方的块。
  • 5.鸡丁加入胡椒粉、料酒、半勺盐和适量淀粉抓匀,腌制20分钟
  • 6.适量葱白切段,干辣椒切段
  • 7.两勺酱油、一勺糖、两勺醋加入一勺淀粉调匀成料汁,可酌情加盐。(糖醋比例可根据自己口味调整)
  • 8.锅烧热放适量油倒入鸡丁滑炒。
  • 9.将鸡丁翻炒至颜色变白八成熟左右。
  • 10.加入葱段和辣椒段翻炒均匀。
  • 11.炒至葱段断生,鸡肉熟后倒入料汁迅速翻炒均匀。
  • 12.关火,加入炸好的花生米炒匀出锅。
