Steps to make 手指饼干

  • 1.将蛋黄和5g细砂糖倒入无水无油的容器中,打至稍稍发白。
  • 2.蛋白分3次加入剩余的白砂糖,打至硬性发泡。
  • 3.将1/2的蛋白霜加入蛋黄糊,轻微搅拌后,再将蛋黄糊倒回蛋白霜里,搅拌均匀。
  • 4.将低粉筛入搅拌好的蛋糊中,用橡皮刮刀上下切拌至无干粉,切勿过分搅拌。
  • 5.切拌好的面糊应该是浓稠、细腻、呈浅黄色的。将拌好的面糊装进裱花袋。均匀的挤在铺有油纸的烤盘上,烤箱预热190℃,10分钟,烤好后立即出炉。
