金银蒜蒸扇贝
中医认为,扇贝味甘咸性微温,有滋阴养血、补肾调中的功效,主治消渴、肾虚尿频、食欲不振等。
  营养学家认为,扇贝富含蛋白质、碳水化合物、核黄素和钙、磷、铁等多种营养成分,蛋白质含量高达61.8%,为鸡肉、牛肉、鲜对虾的3倍。矿物质的含量远在鱼翅、燕窝之上。扇贝含丰富的谷氨酸钠,味道极鲜。

Steps to make 金银蒜蒸扇贝

  • 1.取适量粉丝泡发。
  • 2.用食指卷适当的粉丝。放在扇贝壳中。
  • 3.扇贝我买的是冰冻的整个没处理的。如果自己处理不了,市场有处理好的半壳贝。回家只要洗干净扇贝里黑色物质,刷干净扇贝壳就行。
  • 4.姜切细丝。蒜切小粒,分成两份。
  • 5.炒锅的1小勺油把蒜末炒成金黄色。
  • 6.调料碗:炒过的蒜粒,剁碎的蒜粒,一小勺蒜蓉辣酱(李锦记)或者用剁椒,海南的灯笼辣酱也行,生姜丝,白糖1g。
  • 7.调入生抽1大勺,料酒2大勺。
  • 8.扇贝的贝柱比较厚,为了更好入味可以用刀切“井”字状。
  • 9.把味汁浇在扇贝上,上锅蒸3分钟(扇贝没有放在盘子里,上锅蒸千万不要超3分钟)。时间长了会蒸过了。
  • 10.蒸过了,蒸过了,千万别超3分钟。
